urban legend vs science - 2nd try...no takers?

I just watched a debreedment of muscle that to me looked extremely 
healthy. It was 5d after a crush injury, the muscle still looked nice 
and pink but it did not jump when touched with the electrocautery. Is 
there any science here or is it a legend that if it doesnt  jump it is 
dead.
